Roast Potatoes

Yukon gold potatoes (you’ll need about 2 potatoes per person.)
Olive oil
Kosher salt
Freshly ground black pepper
Sprig of rosemary (optional)
Instructions

Preheat oven to 450 degrees

Dice Yukon gold potatoes (ensure all pieces are roughly the same size to ensure even cooking).

Toss in a roasting pan with enough olive oil until potatoes are covered (but not swimming in the oil). Make sure the pan isn’t too crowded.

Generously sprinkle kosher salt. Grind some pepper too, if you like pepper.

Roast for approx. 35-45 minutes.

Check potatoes every 10 minutes or so and shake the pan to prevent too much sticking.

You can finish with a sprinkling of fresh rosemary, but that’s optional.
